We picked over 40 pounds of garlic scapes this year! We sell our scapes each year in June as soon as we pick them. Once the scapes are picked, the garlic has about a month left until it is fully mature and ready for harvest. After cooking, they have a green bean-like consistency but a mild garlic flavor (see our recipe page). If you would like to eat them raw, they work well chopped like chives and put on a salad.
